The Flock

Our ewes

Our flock of 50 Lacaune ewes are our star milk producers, a breed known for their exceptional milk quality and gentle nature. Each with their own cheeky character and unique personalities, they love nothing more than escaping out of their field on the search for new grass.

But they are easy to get back, a shake of the bag and they will all come running

By maintaining a smaller flock, we ensure that each sheep receives individual attention and optimal care, which directly translates to the quality of the milk they produce. We believe that happy sheep make the best ice cream and our practices reflect this philosophy.

Why Lacaune Sheep?

The Lacaune sheep originate from the picturesque region of Aveyron in southern France. They are renowned for their superior milk production, making them the ideal choice for our farm. Here are some of the reasons why Lacaune sheep are perfect for milking:

  • High Milk Yield: Lacaune sheep are prolific milkers, providing a rich and plentiful supply of milk. Each ewe can produce an impressive amount of milk, which is essential for making high-quality ice cream.

  • Rich and Creamy Milk: The milk from Lacune sheep is naturally rich in butterfat and proteins, which gives our ice cream its luxurious texture and full-bodied flavour. This richness allows us to create an ice cream that is not only smooth but also deeply satisfying.

  • Gentle Temperament: Lacaune sheep are known for their docile and friendly nature, making them easy to manage and milk. Their calm demeanour ensures a stress-free environment for both the sheep and us, resulting in happier, healthier animals.

The Secret to Our Delicious Ice Cream

The secret to our ice cream’s exceptional taste lies in the quality of the Lacaune sheep's milk. Here’s why our ice cream stands out:

  • Exceptional Flavour: The high butterfat content in Lacaune sheep milk gives our ice cream a naturally sweet and rich flavour that you won't find in ice cream made from cow's milk. This unique taste is often described as more complex and indulgent.

  • Creamy Texture: The protein structure in sheep's milk contributes to a denser and creamier texture. This results in an ice cream that is smooth and velvety on the palate, providing a luxurious mouthfeel with every bite.

  • Nutritional Benefits: Sheep's milk is also higher in essential vitamins and minerals compared to cow's milk, offering additional health benefits while you enjoy your treat.

  • Lactose: With sheep's milk being lower in lactose than most other milk and having small fat globules it makes it much easier to digest. Which means even people that are lactose intolerant can enjoy our deliciously smooth and creamy ice cream
